ANTELOPE
Nilgai are the second largest member of the antelope family. These are large sturdy animals with mature males weighing up to 600 pounds. Mature males are often referred to as “blue bulls” because of their distinctive blue/black color.

A native of India and a member of the bovine family, Nilgai were originally brought to Texas for sport hunting on game farms. Texas proved to be an ideal environment for these animals and they reproduced rapidly with calves developing into even larger and healthier animals than the parents. They did so well in fact that several Texas ranches now have wild unrestrained herds roaming about.

Ranchers, originally concerned about the wild herds, quickly learned that the meat of the Nilgai Antelope was delicious and highly sought after by those who had ever sampled it.

Since the animal is quite elusive, many older sport hunters decided it would be easier to buy the meat instead of hunting for it. So they pressured ranchers to round-up these critters and send them off to be processed into roasts and steaks. Although still scarce in the USA, Nilgai Antelope meat is available from Venison America.

Prepare this delicious meat just like you would any other “Venison” and enjoy its delightful flavor.
