Complimentary Recipe – Wild Boar Ham Steaks

Venison America wild Boar/Feral Swine is raised right here in Wisconsin on a farm in the Mississippi River valley complex. These Boars love their free range in the fields and woods almost as much as the corn grown on their farm. These animals are delicious.

Custom cutting at a modern USDA inspected facility insures a beautiful and healthy presentation. Our ham is custom smoked and cut to provide the best ham steak available. Each steak weighs 4 oz and is cut 1-1/2 in thick.

Ingredients:
4 Wild Boar ham steaks
4 oz Currant Jelly
1/4 cup white Wine (we like to use Rhine wine)
2 tablespoons Olive oil
1 clove garlic peeled, smashed and diced
1 tablespoon Brown Sugar
2 teaspoons Balsamic Vinegar

Preparation:

Remove ham steaks from refrigerator and pat dry with paper towels.

Add remaining ingredients to a heavy Ziploc bag, seal and mix thoroughly. 

Add ham steaks and marinate in refrigerator for 2 hours.

Remove meat from refrigerator 15 minutes before cooking. Keep in marinade until ready to cook. Reserve marinade.

Cooking:

Cook by grilling over medium heat 4 minutes per side.

Cook by sautéing over medium heat 4 minutes per side.

Add marinade to small saucepan and simmer until reduced to 1/2 original volume. This should yield thick syrup. If too thin dissolve 1 teaspoon cornstarch in cold water. Add to mixture and boil for 1 minute.

Serve over grilled ham steaks.
