| 8 Cups | (1 @ 8 oz package) Mixed greens |
| 1/2 Cup | Cheddar Cheese cut into thin strips |
| 1 | Tomato cut into wedges |
| 1/2 Cup | Canned whole kernel corn |
| 2 1/2 Cups | Sliced grilled duck breast (chilled) |
| 1/4 Cup | Nuts (walnuts or pecans) |
| 1 1/2 Cups | Croutons |
| 1 Cup | Maple Raspberry Vinaigrette (See Below) |
| Maple Raspberry Vinaigrette | |
| 1/3 Cup | Pure Maple Syrup |
| 1/3 Cup | Raspberry Vinegar |
| 1/2Tbs. | Basil (fresh preferred) |
| 1/3 Cup | Extra Virgin Olive Oil |
| 1/4 tsp. | Sea salt |
| Make a bed of salad greens in a large salad bowl or serving platter. Top with cheese, tomato, corn, sliced duck breast, and nuts. Just prior to serving, add croutons and vinaigrette.
Mix all ingredients. Shake well. Store in refrigerator. Serve at room temperature. |
