Ground Elk:

Custom ground Elk from Venison America is 100% elk. Most importantly, we only grind meat with no tallow or fat so this means that our ground meat is very lean, 95% or better. 


Ingredients:

5 pounds Custom ground Elk
1-pound apple smoked bacon
2 medium sweet white onions
1 each seeded and diced; red, yellow and green bell peppers
1 large clove garlic, peeled, smashed and diced.
3 large tomatoes, seeded and cut into large pieces
3 Chipolti peppers
2 Anaheim chilies
2 jalapenos
1 tablespoon dried red pepper flakes
1/4 cup ground cumin
1/2 cup chili powder
2 tablespoons each; sea salt and fresh ground pepper
1/4 cup tomato paste
1-1/2 quarts chicken stock divided (elk stock is preferred but not readily available; However, we do sell bones so you can make your own.)
1/2 cup bourbon or whiskey
1/2 bunch cilantro
3 sprigs rosemary
1-1/2 cups sun dried cherries
3 cups shitake mushrooms
3 tablespoons balsamic vinegar
6 corn tortillas, julienne and fried crisp
3 oz crumbled blue cheese (Maytag)


Preparation:

Cut bacon into small pieces. Cook in Dutch oven until brown. Add ground elk and until no longer pink. Drain fat.


Add onion, bell peppers, tomatoes, Chipolti, Anaheim, jalapenos, red pepper flakes, cumin, chili powder, salt, black pepper, tomato paste, 4 cups stock and bourbon. Bring to a simmer and cook for 1 hour.


Remove and discard the stems of the cilantro and rosemary. Finely chop. Stir chopped cilantro and rosemary into chili along with the cherries, mushrooms, vinegar and bourbon. Simmer 30 minutes more.


Add remaining stock and simmer for 20 minutes. Adjust seasoning to taste.


Laddle into bowls and top with tortilla strips and crumbled blue cheese.
